Helberg Barbecue, in Waco, TX is one of our favorite examples of exceptional Texas Barbecue. Their brisket does justice to the Vaqueros who smoked beef over mesquite wood fires while traveling the Chisolm Trail. Extremely flavorful and moist, Helberg’s brisket is made with “salt, pepper, and a whole lot of prayer”. The prayers must have worked because the taste was divine for such minimal ingredients. The smoke is allowed to sing, featured so prominently that the sauce becomes an after thought.
In addition to some of the best brisket you’ve ever tasted, Helberg’s sides are noteworthy. Sometimes, when the meat is as exceptional as Helberg’s, it is easy to think the sides are more of a formality—included only as an afterthought or necessity while the focus is on meat. The Helberg Mac n Cheese, however, could be a feature all it’s own. Topped with crunch in the form of crumbled chips and fried onion and thick with creamy cheese, we wouldn’t be opposed to eating this as an entire meal. One simply cannot visit Helberg and neglect the Mac.
We would be remiss if we did not include, as an honorable mention, the potato salad. Made with mustard and vinegar, this tangy side plays uniquely with flavors, and balances the heartier smoke flavor nicely.
The best thing about this top Texas barbecue joint is the family behind it. I first met Phillip and Yvette Helberg—owners and masterminds behind the flavor—years ago, when they were starting out at the farmer’s market. My wife and I visited their booth every Saturday at the farmer’s market until they started their first food truck. From there to here, they have remained down-to-earth, kind, and passionate about good barbecue.
BBQofTX is a fan of Helberg. Like smoky missionaries, we go out proclaiming the good taste of their brisket. So many tourists making their pilgrimages to Waco these days, and we are certain they can taste a bit of heaven at Helberg.
